Extra virgin, virgin, lampante or refined: which olive oil grade to buy in bulk
Bulk “olive oil” is actually five different products, with different prices, uses and regulations. Buying a higher grade than your process needs means overpaying; buying below it means risking the result.

The five grades in short
Extra virgin olive oil (EVOO) is pure olive juice with no defects: free acidity up to 0.8° and a clean result in the official tasting panel. Virgin olive oil allows slight sensory defects and acidity up to 2°. Lampante is virgin oil not fit for direct consumption — its destination is the refinery. Refined olive oil is lampante stripped of colour, smell and taste, and the commercial blend “olive oil” (refined plus a share of virgin) is the mild or intense oil on supermarket shelves. Finally, olive pomace oil is extracted from the by-product of the mill, refined and finished with virgin oil.
Which grade for which industrial use
Premium bottling and top hospitality call for EVOO, with origin and campaign written into the specification. Canning, sauces and doughs usually run on virgin or on the refined-plus-virgin blend, depending on the target flavour profile and cost. Industrial frying is the land of the “olive oil” blend and of pomace olive oil — pomace is the great undervalued oil in frying thanks to its stability and price. Cosmetics and soap making range from EVOO in premium natural cosmetics down to pomace in traditional soap.
The parameters that really separate the grades
Four laboratory measures — free acidity, peroxide value, K270/K232 UV absorbance and ethyl esters — plus the sensory panel (only for virgin oils) are what legally separates one grade from another. All of them show up in the certificate of analysis of the exact batch — ask for it before any contract, always.
Prices move with the campaign
The gap between grades widens or narrows every campaign depending on the Spanish and Mediterranean harvests. Buying from a producer at origin with its own storage lets you lock in grade and delivery schedule, not just price.
Our advice: tell us the end use
Tell us the final use and the flavour profile you are after, and we recommend the grade — or the combination — with samples and certificate of analysis. Quite often there is a more economical grade that meets your specification exactly.
